- 2 1/2 tsp baking powder
- 2 eggs
- 3.5 oz sugar
- 2.7 fl oz oil
- 10.5 oz yogurt (or buttermilk/sour cream)
- 5.3 oz chocolate coating (Manner chocolate coating or melted chocolate)
- Sugar pearls
- Coconut flakes with blue food coloring
- Sugar eyes
- Small butter cookies
- Preparation: Preheat the oven to 356°F using the top and bottom heat setting. Grease a muffin tin and line it with paper shapes or lightly oil it. Chill in the refrigerator.
- Dry Ingredients: In a bowl, combine the flour, almonds, cocoa, and baking powder. Mix until well combined.
- Wet Ingredients: In a separate bowl, whisk together the eggs, sugar, oil, and yogurt until smooth.
- Combining Mixtures: Gradually add the dry mixture to the wet mixture and stir until a uniform batter forms.
- Baking: Pour the batter into the prepared muffin tin and bake for about 15-20 minutes at 356°F. Once done, allow them to rest in the tin for 5 minutes before transferring them to a cooling rack.
- Colored Coconut: In a ceramic bowl, tint the coconut flakes with 1 to 3 squirts of blue food coloring, adjusting to your desired intensity.
- Chocolate Coating: Melt your chosen chocolate coating and either brush it onto the cupcakes or dip the cupcakes into it.
- Decoration: Before the chocolate coating dries, quickly dip the cupcakes into a bowl of sugar pearls or the blue-colored coconut flakes. Affix sugar eyes with a dab of the melted chocolate. For the mouth, make a small slit with a knife and insert a small butter cookie.
Allow the cupcakes to set, ensuring the decorations are firmly in place.
Decorating requires a bit of patience, so allot ample time for this step.
