Perfect for any Halloween party: monster cupcakes.
Ingredients:
- 7 oz flour
- 1,7 oz grated almonds
- 3 tablespoons cocoa powder
- 2 1/2 tsp baking powder
- 2 eggs
- 3,5 oz sugar
- 2,7 fl oz oil
- 10,5 oz yogurt (you can also use buttermilk or sour cream)
- 5,3 oz chocolate coating (I used the Manner chocolate coating, but you can also just melt chocolate)
Decoration: sugar pearls, coconut flakes and blue food coloring, sugar eyes, small butter cookies
Instructions:
Preheat the oven to 356 F top and bottom heat. Grease the muffin tin with paper shapes or oil and place in the refrigerator. Mix flour, almonds, cocoa and baking powder in a bowl. Whisk eggs, sugar oil and yogurt in another bowl. To the egg mixture, add the flour mixture and mix until smooth.
Bake in the oven at 356 F for about 15 - 20 minutes. Then let rest in the mold for 5 minutes and only then remove from the mold.
And now the decorating: If you want to use the coconut flakes, take a bowl (preferably ceramic and not plastic) and mix some food coloring with the coconut flakes. Depending on the intensity of the color, add one to 3 squirts of food coloring. If you use the sugar pearls, put them in a bowl where the muffin will fit.
Now brush or dip the muffins with chocolate coating. Dip the muffins, still freshly coated with chocolate (you have to work quickly here, because when the chocolate dries, the further decoration will not hold!) in a bowl of sugar beads or colored coconut shavings. Also with a little chocolate glue on the eyes. For the mouth, make a small cut with a knife and stick the cookie inside. Set out to dry.
Extra tip: Allow enough time, decorating already takes a little time
